As Catholics, we observe the tradition of eating meatless meals on Fridays during Lent.
When I was growing up we would go to my grandparent’s house for dinner every Friday night during Lent. We would order cheese pizza or my grandfather would make macaroni and cheese from a box. I don’t know what he did differently, but his macaroni and cheese was better than everyone else’s. I couldn’t get enough of it.
My palate has changed and I don’t eat the mac and cheese from a box anymore. Cheese pizza gets boring fast. I have a few meatless recipes that I usually rely on, but I’m always looking for new recipe ideas.
Lent starts next week on Ash Wednesday and I’ve compiled a list of 41 meatless meals for Lent that I want to share with you. This list is extensive enough that you could continue to eat meatless meals every Friday for the remainder of the year if you wanted to. (This is a great way to trim your grocery budget!!)
I’ve included pasta recipes, seafood, soups, quick meals and many Mexican dishes. You’re sure to find something to suit your family’s tastes.
